Chickpea falafel

Ingredients

  • 2 440ml cans of chickpeas (drained, rinsed and patted dry)

  • 1 cup baby spinach (roughly chopped)

  • 1 large clove of garlic( finely chopped )

  • 6 green kalamata olives

  • 1 tsp miso paste

  • 1 tsp tahini

  • 1 tsp mustard

  • 2 tbsp chives (chopped)

  • 2 tbsp nutritional yeast

  • 2 tbsp avocado oil

  • Cayenne pepper, Cajun spice and chili flakes

Method

  • Add all ingredients onto a food processor

  • Using the pulse setting, pulse the ingredients until roughly combined

  • Form the mixture into balls

  • Use the “potatoes chips” setting on the airfryer and “fry” the falafel for 20 minutes.

Serving suggestion

• serve on a bed of salad greens or baby spinach with avocado and Rosa tomatoes
