Vegan potato bolognese lasagne

NGREDIENTS

  • 4 medium potatoes

  • 1/4 cup @woolworths_sa bolognese sauce(tomato and basil)

  • 1 tbsp tomato paste

  • 1 cup chopped onion

  • 1/4 cup chopped green peppers

  • Extra virgin olive oil

  • 1/2 cup @woolworths_sa plant based protein mince

  • 1/4 cup cashew cream (

  • Salt and pepper to taste

METHOD

Potatoes

  • Peel and slice potatoes into rounds

  • Boil until semi cooked, remove from heat and drain

  • In a sauce pan heat the olive oil

  • Add the potatoes in batches (avoid crowding the pan)

  • Fry potatoes until crisp on the outside and set aside.

Bolognese sauce

  • Add onion and green pepper onto the heated olive oil

  • Add salt and pepper and fry until softened

  • Add the tomato paste and stir to combine

  • Pour mince and stir to make sure it’s coated in the “relish” mixture.

  • Add the pasta sauce and cover pot to simmer for 5 minutes.

  • Remove from heat and pour sauce onto a bowl

Layering

Using the same sauce pan

  • layer half of the potatoes on the bottom of the pan

  • Add half the bolognese sauce, spread to cover the potatoes

  • Follow with half the cashew cream, spreading it on top of the sauce

  • Add the remaining half of the potatoes, sauce and cashew cream, in the same order as above

  • Sprinkle some freshly ground black pepper

  • Put back on the stove on medium heat and cook for 5 minutes.
